Dinner in a Flash: Savory Chicken and Couscous

Savory Chicken from Phyllis Brown
- 6 lbs of chicken thighs and legs trimmed of skin
- 2 tablespoons of coriander
- 2 1/2 tablespoons of cumin
- 1-2 teaspoons of salt
- 3 tablespoons of minced garlic
- 1 lemon thinly sliced
- 16 shallots peeled and sliced
- Black pepper to taste
- 1/4 cup of olive oil
- 2 teaspoons of brown sugar
- 2/3 cup of chopped apricots
- 3/4 teaspoons of cinnamon
- 3 tablespoons of lemon juice
- 1/3 cup of capers
- 1/2 cup of white wine
Combine all ingredients and let marinate for at least 12 hours.
Preheat oven to 350 degrees. Bake for 45 minutes. Chop cilantro and sprinkle over top.
Couscous Recipe
- 3 cups of chicken broth
- 1 tablespoon of chopped ginger
- 2 cloves chopped
- Juice of 1 lime
- 1 1/2 cups of uncooked couscous
- 1 tablespoon of olive oil
- 1/4 cup of currents
- Sliced green onions
Heat chicken broth to boil, add garlic, ginger, limejuice and olive oil. Pour over couscous and cover and let set for about 10 minutes. Add currents, stir and sprinkle sliced onions over top.
