Oui Oui: Green Peppercorn Scotch Chicken

This is a simplified version of a delicious French recipe:
- 1 ½ lbs chicken breast (halve width wise so that they are thin)
- 8 oz sour cream (add more if you want it creamier)
- 1 pkg mushrooms, sliced
- 2-3 Tbs green peppercorns (to your own peppery preference)
- ½ cup scotch (a big guesstimate)
Heat 1-2 tbsp of olive oil in large sauté pan, add chicken breasts and cook through, browning on both sides. Add mushrooms and scotch, cook a while to have chicken absorb flavor. Add sour cream, stir to make a smooth sauce, add peppercorns.
This is such an easy recipe that can be modified so easily and add/remove things to make it exactly how you like it and is delicious served with orzo pasta or rice, anything to help soak up the sauce.
